Some like it hot?? Why on earth??

I can't for the life of me figure out how someone 'like's hot sauce on their food. First of all the word 'hot' is not that inviting. Then there is your actions after the effects. No amount of water will cool down your mouth (they claim milk helps).
I guess I'm still trying to understand how this is enjoyable???

I like some zing to my food – it adds flavor. But I don't like it hot-hot-hot so that it burns my mouth. Just a little zing….like a medium level of zing.
